Ingredients
  

Muffin Batter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter melted
  • 1 large egg
  • 1 teaspoon vanilla extract
Cinnamon Filling
  • 1/2 cup brown sugar packed
  • 1 tablespoon ground cinnamon
  • 1/4 cup unsalted butter softened
Glaze
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Method
 

Prepare the Muffin Batter
  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a mixing bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, combine milk, melted butter, egg, and vanilla extract. Mix well.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
Make the Cinnamon Filling
  1. In a small bowl, mix together brown sugar, cinnamon, and softened butter until well combined.
Assemble the Muffins
  1. Spoon a small amount of muffin batter into each muffin cup.
  2. Add a spoonful of the cinnamon filling on top of the batter, then cover with more muffin batter.
  3. Repeat until all muffin cups are filled.
Bake and Glaze
  1. Bake in the preheated oven for 18-20 minutes or until a toothpick comes out clean.
  2. While muffins are baking, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract.
  3. Once muffins are done, let them cool slightly before drizzling with glaze.
