Ingredients
  

Cake Batter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
Cherry Topping
  • 1 cup fresh cherries pitted and halved
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
Frosting
  • 1 cup powdered sugar
  • 1/2 cup unsalted butter softened
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk

Method
 

Prepare the Cake
  1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In another bowl, combine the flour, baking powder, and salt. Gradually add to the creamed mixture alternately with milk.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
Prepare the Cherry Topping
  1. In a small saucepan, combine the cherries, sugar, and lemon juice. Cook over medium heat until the cherries are soft and the mixture thickens slightly.
Prepare the Frosting
  1. In a mixing bowl, beat together the softened butter and powdered sugar until smooth. Add vanilla and milk, mixing until creamy.
Assemble the Cake
  1. Once the cake has cooled, spread the frosting evenly over the top.
  2. Top with the cherry mixture, spreading it evenly over the frosting.
  3. Slice and serve the cake.
