Ingredients
  

For the Salmon
  • 4 fillets salmon skin-on or skinless
For the Bourbon Glaze
  • 1/2 cup bourbon preferably a good quality bourbon
  • 1/4 cup brown sugar packed
  • 1/4 cup soy sauce low sodium recommended
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon black pepper freshly ground

Method
 

Prepare the Glaze
  1. In a saucepan, combine bourbon, brown sugar, soy sauce, Dijon mustard, olive oil, minced garlic, and black pepper. Bring to a simmer over medium heat.
  2. Reduce heat and let the mixture simmer for about 10 minutes, or until it thickens slightly.
Cook the Salmon
  1. Preheat the grill to medium-high heat.
  2. Season the salmon fillets with salt and pepper.
  3. Place the salmon on the grill, skin-side down, and brush generously with the bourbon glaze.
  4. Grill for about 6-8 minutes, then carefully flip the salmon and brush with more glaze. Cook for an additional 4-6 minutes, or until the salmon flakes easily with a fork.
Serve
  1. Remove the salmon from the grill and let it rest for a few minutes before serving. Drizzle with any remaining glaze.
