Prepare the Glaze
- In a saucepan, combine bourbon, brown sugar, soy sauce, Dijon mustard, olive oil, minced garlic, and black pepper. Bring to a simmer over medium heat.
- Reduce heat and let the mixture simmer for about 10 minutes, or until it thickens slightly.
Cook the Salmon
- Preheat the grill to medium-high heat.
- Season the salmon fillets with salt and pepper.
- Place the salmon on the grill, skin-side down, and brush generously with the bourbon glaze.
- Grill for about 6-8 minutes, then carefully flip the salmon and brush with more glaze. Cook for an additional 4-6 minutes, or until the salmon flakes easily with a fork.
Serve
- Remove the salmon from the grill and let it rest for a few minutes before serving. Drizzle with any remaining glaze.
