Preparation
- Season the beef chuck roast with salt and black pepper on all sides.
- In a skillet, heat olive oil over medium-high heat and brown the roast on all sides.
- Transfer the browned roast to the crock pot.
- Add carrots, celery, onion, and garlic around the roast in the crock pot.
- In a bowl, mix beef broth, Worcestershire sauce, thyme, and rosemary. Pour over the roast and vegetables.
Cooking
- Cover and cook on low for 8 hours or until the beef is tender.
- Once done, remove the roast and vegetables from the crock pot. Let the roast rest before slicing.
- Serve with the cooking liquid as gravy.
