Ingredients
  

Shrimp
  • 1 pound large shrimp, peeled and deveined
Breading
  • 1 cup panko breadcrumbs
  • 1 cup all-purpose flour
  • 2 large eggs beaten
Bang Bang Sauce
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon Sriracha adjust to taste
Rice and Vegetables
  • 2 cups cooked jasmine rice
  • 1 cup shredded cabbage
  • 1 cup sliced cucumbers
  • 1 cup sliced carrots
  • 1/4 cup green onions sliced

Method
 

Prepare the Shrimp
  1. In a mixing bowl, coat the shrimp with flour, then dip in beaten eggs, and finally coat with panko breadcrumbs.
  2. Heat a large skillet over medium heat and add oil for frying.
  3. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side.
Make the Bang Bang Sauce
  1. In a small bowl, mix together mayonnaise, sweet chili sauce, and Sriracha until well combined.
Assemble the Bowl
  1. In serving bowls, layer cooked jasmine rice, shredded cabbage, cucumbers, and carrots.
  2. Top with fried shrimp and drizzle with Bang Bang sauce.
  3. Garnish with sliced green onions and serve immediately.
