  • 2 cups Long-Grain Rice
  • 1 can Pigeon Peas drained and rinsed
  • 3 cups Chicken Broth
  • 1 tablespoon Olive Oil
Sofrito Ingredients
  • 1 medium Onion chopped
  • 1 medium Green Bell Pepper chopped
  • 1 medium Red Bell Pepper chopped
  • 4 cloves Garlic minced
  • 1 bunch Cilantro chopped
  • 1 teaspoon Oregano
  • 1 teaspoon Cumin
Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Adobo Seasoning

Method
 

Prepare Sofrito
  1. In a large pot, heat olive oil over medium heat. Add onion, green bell pepper, red bell pepper, and garlic. Sauté until softened.
  2. Stir in cilantro, oregano, and cumin. Cook for an additional 2-3 minutes until fragrant.
Cook Rice
  1. Add the rice to the pot and stir to coat with the sofrito.
  2. Pour in the chicken broth and add the pigeon peas, salt, black pepper, and adobo seasoning. Stir well.
  3. Bring to a boil, then reduce heat to low. Cover and simmer for about 30 minutes, or until the rice is cooked and liquid is absorbed.
  4. Remove from heat and let sit covered for 5 minutes before fluffing with a fork.
